Creamy Sweet Potato Soup with Grassfed Beef Sausage

Creamy Sweet Potato Sausage Soup

  • 1/2 lb ground beef
  • 1 T. homemade sausage seasoning (recipe here)
  • 2 T. oil or butter
  • 1 onion, minced
  • 2 stalks of celery (optional) minced
  • 1 garlic clove or 1 tsp minced garlic (homemade minced garlic in a jar here)
  • 1 cup beef stock
  • 4 cups milk
  • 1 lb potatoes, cut into 1/2” cubes (can substitute cauliflower)
  • 1 lb sweet potatoes, cut into 1/2” cubes
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp salt

Brown the ground beef with the sausage seasoning then set aside.  (Alternately, you could brown 1 lb of ground beef with 2 T. sausage seasoning and set aside half of the cooked beef to use later with scrambled eggs.)

Heat oil or butter in a large pot. Add the onion and celery (optional) and saute until tender. Add the minced garlic and saute briefly until fragrant.

Add the beef stock, milk, potatoes, sweet potatoes, herbs, and salt. Cover and simmer for about 30-45 mins until the vegetables are tender.

Add the ground beef to the soup. Add more milk or stock if the soup is too thick. If you want to thicken the base, you can add 1/4-1/2 cup cream cheese.

Serve with sour cream and or cheese.

Makes about 4 servings.
