Chocolate Chip Coconut Cashew Bars (Homemade Lara Bars)
Inspired by the popular store bought Lara Bars, this easy recipe is a no-bake treat made primarily with nuts, dates, and coconut. Josie loves to help me make these because she gets to snack on the dates and chocolate chips as she dumps the ingredients in the food processor.
Chocolate Chip Coconut Cashew Bars (Homemade Lara Bars)
- 1 cup unsalted cashews
- 1 cup pitted dates
- 1/2 cup shredded coconut
- 2 Tablespoons coconut oil
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup chocolate chips
Add all ingredients except the chocolate chips to a food processor and grind until the mixture is fine crumbs and is beginning to stick together.
Add the chocolate chips and pulse until they are incorporated (and chopped up if you prefer).
Line a small container with parchment paper (I used a 5x7 glass pyrex). Press the mixture firmly in an even layer.
Refrigerate until hardened.
Cut into squares and enjoy!
Store in the refrigerator.
