Chocolate Chip Coconut Cashew Bars (Homemade Lara Bars)

Inspired by store bought Lara Bars, this easy recipe is a no-bake treat made primarily with nuts, dates, and coconut.  Josie loves to help me make these because she gets to snack on the dates and chocolate chips as she dumps the ingredients in the food processor.

  

Chocolate Chip Coconut Cashew Bars (Homemade Lara Bars)

  • 2 cups pitted dates
  • 1 cup unsalted cashews
  • 1 cup walnuts
  • 1 cup shredded coconut
  • 1/2 tsp salt
  • 1/4 cup coconut oil (if needed, see note below)
  • 1/4 cup mini chocolate chips

Add all ingredients except the coconut oil and chocolate chips to a food processor and grind until the mixture is fine crumbs and is beginning to stick together. If the mixture isn't clumping together when pressed with your fingers, add the coconut oil and process.

Add the chocolate chips and pulse until they are incorporated.

Line a container with parchment paper (I used a 6x8 glass pyrex). Press the mixture firmly in an even layer.

Refrigerate until hardened.

Cut into squares and enjoy!

Store in the refrigerator.

Have you ever made these with peanuts instead of cashews? These look so tasty but we have a tree nut allergy.
