Chocolate Honey Caramel Corn
Adapted from Honey Caramel Corn on The Prairie Homestead blog
- 1/2 cup popcorn
- 1/3 cup butter
- 1/3 cup Little Shire's Double Chocolate Infused Honey
- 1/3 cup coconut sugar or brown sugar
- 1/4 tsp salt
- 1/4 tsp baking soda
Preheat oven to 250 degrees.
Pop popcorn according to your preferred method and pour into a large bowl. Make sure to use a large enough bowl to have plenty of room for mixing in the chocolate sauce evenly.
Mix butter, honey, sugar, and salt in a small saucepan and simmer for 5 minutes. Add baking soda and stir to combine. The addition of baking soda will make it fizz- this is normal. Immediately pour sauce over the popcorn and mix to coat all the popcorn evenly.
Spread popcorn on 2 baking sheets lined with parchment paper.
Bake for 10 minutes at 250 degrees. Flip popcorn, return to the oven, and bake for 10 more minutes. The popcorn will still be a little sticky, but should become crunchy as it cools.
Enjoy!
