A Week of Our Family's Summer Meals
I love cooking during the summer because it's so fun to incorporate fresh herbs and local produce to make flavorful meals. Here are snapshots of what I've been cooking for my family. I hope this will give you a few ideas for your own family's menu! (Click each link for the recipe!)
Weekly Favorites
We make sourdough pancakes and Lindy's pasture-raised nitrate-free bacon almost every Saturday morning.
I usually make homemade pizza once a week. I use sourdough crust and bake it in two cast iron skillets in my oven. I preheat the skillets in the oven while the oven is preheating to 500 degrees so that the crust gets nice and crispy as soon as I add the dough to the hot skillet. I use Lindy's plain ground pork cooked with my own sausage seasoning as the meat on our pizzas.
Breakfast
We have eggs for breakfast almost every morning so I try to add different ingredients to the eggs so that I don't get tired of just plain old eggs.
This morning I added pork sausage (leftover from making pizza above) to scrambled eggs and topped it with cheese, avocados, and basil. Served on Breadico toast!
This morning I topped my cheesy scrambled eggs on toast with fresh tomatoes and basil.
Lunch
Joshua and I often have a hearty salad for lunch. This particular salad had lettuce, tomatoes, cucumbers, chicken, cheese, and BASIL!
Of course my kids- being typical toddlers- don't go for salads and on this day we were out of bread for sandwiches, so I hard boiled some eggs, pulled out a few pieces of cold leftover chicken, and added homemade refrigerator pickles and cherry tomatoes. Dessert was nectarines. I added electrolytes (we like LMNT electrolytes) to their water since they had been at the fair that morning and needed to rehydrate.
Dinner
I marinated Greek chicken thighs and Joshua grilled them. We served it with quinoa, tomatoes, avocados, and tzatziki.
Thinly sliced zucchini is a low-carb alternative to pasta in lasagna. Here is the recipe I use for zucchini lasagna. (Not my photo.)
Joshua grilled Goosemobile chicken thighs and I think I served it with sourdough cornbread and fresh green beans.
I made this Turkey Pesto Tomato Sandwich on sourdough focaccia. So good! (Not my photo.)
