Sugar Snap Pea Salad

Sugar snap peas are delicious on their own, but the addition of a simple dressing and a few other flavors makes them even better.
This recipe was created by one of our customers, Brandy.
Sugar Snap Pea Salad
- 1 T neutral flavored oil, such as avocado oil
- 1 T rice vinegar
- 1/2 T. honey
- 1 tsp grated ginger
- 1/4 tsp salt
- 1/8 tsp pepper
- 8 oz. (pint) sugar snap peas, stringed and cut in half
- 1/4 cup finely diced red onions, spring onions, or garlic scallions
In a medium bowl, whisk together the dressing ingredients.
Add peas and onions and toss to coat.
Makes 3 servings.
This salad stores very well and can be packed for lunch or taken to a picnic.
