Rich and Creamy Dairy-Free Fudgesicles

My husband became addicted to the Healthy Choice organic fudgesicles from Costco and was devouring several in one sitting. I can’t stand to purchase any food item that I can make myself, so I set out to make a homemade version that was just as rich, soft, and fudgey.

Although our family usually uses raw organic cow milk, I discovered through experimenting that coconut milk actually gives these fudgesicles a creamier texture. Those of you who are dairy free will appreciate this recipe!

Whether you prefer to savor your fudgesicle lick by lick (like me) or demolish it in bites and raid the freezer for a second (like my husband), these homemade fudgesicles are sure to please.

Rich and Creamy Dairy-Free Fudgesicles

1 14 oz. can full fat coconut milk, divided
1/2 cup coconut sugar
1/3 cup cocoa powder
1 T. tapioca starch, arrowroot powder, or cornstarch
1/4 cup water or milk*
1 tsp vanilla

Pour half the can of coconut milk into a small saucepan. Add the water, sugar, cocoa, and tapioca starch. Cook until bubbly and thick. (It should still be pour-able, not as thick as pudding.)

In a blender, combine the cooked mixture with the remaining 1/2 can coconut milk, 1/4 cup other milk, and 1 tsp vanilla. Blend until smooth.

Pour into popsicle molds and freeze. These are the molds I bought.

Yields 7 2 oz. fudgesicles.

*If you want to keep these dairy free, you can use water or more coconut milk. If you are fine with dairy, regular milk works for this 1/4 cup quantity.
