Apple Fennel Chicken Salad
This chicken salad is crunchy and refreshing with the addition of fennel and apples. Serve over lettuce or on bread.
Apple Fennel Chicken Salad
- 1 cup yogurt and/or sour cream
- 2 T lemon juice
- 1/2 T honey
- 1/2 tsp salt
- 1 T minced fennel fronds
- 1 cup fennel, thinly sliced
- 1 apple, chopped
- 2 cups chicken, diced
Mix all ingredients.
Serve over lettuce or your favorite bread.
Slice your fennel thinly as shown above.
