Sweet potatoes are in!
We are currently digging, so these haven't had time to fully cure. Sweet potatoes are cured by creating conditions of 80 degrees F and 90% humidity for 4-10 days. After that, they should be stored in cooler conditions (50-60 F).
You can and should definitely enjoy these sweet potatoes "uncured" (we do!), but the curing process results in a sweeter potato with a longer storage potential.
