Garlic Scapes

Garlic scapes are the flowering stalks of hardneck garlic varieties. We remove them so the plant can put more energy into sizing up the bulb. They have a wonderful green garlicky taste and we use them in place of garlic in almost everything, both cooked and raw--just remove the flowering tip and chop into thin rounds. 

They are also popular grilled or made into pesto.
