Thai Peanut Chicken Wraps
This recipe was born when I needed an easy to pack meal that we could take with us on the road. I combined the sauce from my Thai Chicken Pizza recipe with crunchy veggies, precooked chicken, and herbs all wrapped up in a tortilla. It is easy to make ahead and pack for on-the-go meals.
If not packing this for later, I would still recommend mixing it together several hours ahead of time to allow the chicken to soak up the sauce and become infused with flavor.
Thai Peanut Chicken Wraps
Sauce:
- 3 T. peanut butter
- 3 T. honey
- 2 T. sesame oil
- 2 T. coconut aminos (this replaces common soy sauce)
- 1 T. Thai curry paste
- 1 T. rice vinegar
- 1 garlic clove, minced
- 1 tsp fresh grated ginger (see my secret ginger trick here)
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 8 oz precooked chicken
- 3/4 cup diced cucumbers and/or bell peppers
- Handful of minced cilantro or Thai basil
Whisk all sauce ingredients thoroughly then combine with chicken, veggies, and herbs.
Wrap in a tortilla, then secure with plastic wrap if not eating immediately.
