Thai Chicken Pizza- An Old Favorite Now Easier to Make
This recipe has personally been one of my favorites since I originally created it in 2018.
However, as was typical of recipes that I cooked in my days before marriage and children, it involved a lengthy multi-step cooking process, and too many dirty dishes.
I recently set out to simplify the cooking process without compromising any of the amazing flavor.
My goal with this pizza is a super flavorful sweet, savory, salty, and spicy pizza without any of the sugar, soy, or MSG that I found in most Thai pizza recipes (which include sweet chili sauce, soy sauce, hoisin sauce, etc).
One shortcut that makes this pizza easy is using whole wheat tortillas as personal-sized pizza crusts. Of course, any other kind of pizza crust can be used as well. This recipe will make enough sauce and toppings for 4 tortilla-sized pizzas.
Thai Chicken Pizza
For the pizza sauce:
- 3 T. peanut butter
- 3 T. honey
- 2 T. sesame oil
- 2 T. coconut aminos (this replaces common soy sauce)
- 1 T. Thai curry paste
- 1 T. rice vinegar
- 1 garlic clove, minced
- 1 tsp fresh grated ginger (see my secret ginger trick here)
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
Whisk all sauce ingredients thoroughly and set aside.
Assemble the pizza:
- 4 tortillas or your favorite pizza crust
- Thai pizza sauce
- 2 cups precooked chicken pieces
- 1 tomato, cut into 1/2 inch chunks
- 1 bell pepper (or anaheims or jalapenos for a spicy pizza)
- Mozzarella cheese
- Thai basil or cilantro for garnish
- Green onions for garnish
Spread pizza sauce evenly on pizza crusts.
Top with chicken, tomatoes, peppers, and cheese.
Bake at 425 for about 10-15 minutes until done to your liking.
Garnish with green onions and Thai basil or cilantro before serving.
Devour!
