Superfood Shamrock Smoothie (with Wheatgrass!)
Recipe notes:
Milk: I prefer the taste and texture of full fat canned coconut milk. I have also tried it with whole cows milk and it's OK, but not as thick and creamy
Measuring wheatgrass: It's tricky to measure the wheatgrass since it's so lightweight. But after making this smoothie once or twice, you will be able to eyeball how much wheatgrass you can use in your smoothie without the taste being noticeable.
Storing wheatgrass: Adding a paper towel to the container of microgreens in the refrigerator will prevent condensation and keep the microgreens fresh for longer. My container of wheatgrass lasted me 10 days in the refrigerator.
Sweetener: Adjust the amounts of honey and stevia extra to suit your sweet tooth!
Superfood Shamrock Smoothie (with Wheatgrass!)
Makes a single serving
- 3/4 cup coconut milk, chilled
- 1/8 oz wheatgrass
- 1/2 banana, frozen
- 6 ice cubes
- 1 tsp chia seeds (optional)
- 1 tsp honey
- A few drops of stevia extract (optional)
- 1 drop peppermint essential oil
- 1 T. chocolate chips
Add all ingredients EXCEPT chocolate chips to a blender and blend until smooth. Add chocolate chips and blend briefly until chopped. Serve!
