Smoked Beef or Pork Stew Meat with Vegetables the Easy Way!

Jamie from Lindy Land & Livestock is not only a knowledgeable and inventive farmer, she is also a great cook and loves to experiment with new recipes. Here's a recipe she created that can be made with their pork stew meat or with Svec's beef stew meat.

This is my go-to meal when I have a full day's work planned for the outdoors (taking care of my pigs!) and I don’t have much time to spend in the kitchen. This is quite a satisfying recipe and I end the day great when enjoying this nutritious meal.

Smoked Beef or Pork Stew Meat with Vegetables the Easy Way!
- 2 lbs beef stew meat (Svec Farm) OR 2 lb pork stew meat (Lindy Land & Livestock)
- 2 sliced carrots (Blue Sky Vegetable Co.)
- 3 sliced Huckleberry Gold Baby Potatoes (Blue Sky Vegetable Co.)
- 1 sliced Red Onion (Blue Sky Vegetable Co.)
- Your favorite seasoning mix
Season meat with your favorite rub or seasoning mix. Lipton Beefy Onion Soup Mix Packet is great on the beef.
(In the pictures I used a homemade smoked dehydrated spice rub I made from my garden goodies.)
Place seasoned meat and veggies in an 8x8 pan.
Preheat wood pellet grill to 150 degrees.
Smoke the pan of meat and veggies for 2 hours uncovered.
Cover the pan with foil and turn grill up to 225 degrees. Continue cooking for another 2-3 hours until the meat reaches an internal temperature of 200-210 degrees.
(Note: A 225-degree grill temperature helps release the natural juices in the meat. The meat juices steam the vegetables and bring the internal meat temp up to 200 degrees.)
Serve over your favorite rice, pasta, or by itself. The possibilities are endless. Enjoy!
