Corned Beef and Sauerkraut Sandwich on Sourdough Bread

Our family's version of the reuben sandwich is made on sourdough with all natural uncured corned beef (available at Natural Grocers).  While traditional reuben sandwiches are made with swiss cheese and Russian or Thousand Island dressing, we use cheddar cheese and dijon mustard since these are common ingredients we always have on hand- it's just as delicious!

What makes sourdough bread so great?
  1. It tastes amazing!
  2. The sourdough fermentation process helps to break down gluten.  Even some people with gluten sensitivity have been able to enjoy Breadico's sourdough because of the way the long fermentation process pre-digests the gluten.

  3. Traditionally fermented sourdough bread has a lower glycemic index and doesn’t impact your blood sugar as much as regular bread.

  4. Sourdough has prebiotics and probiotic bacteria.

  5. Sourdough fermentation has been shown to increase the levels of certain B vitamins.

  6. One of the major benefits of sourdough is that it reduces a compound called phytic acid. Phytic acid is present in whole grains and prevents minerals like calcium, magnesium, iron, copper, and zinc from being absorbed.  The fermentation process reduces the phytate levels 70-90%, while non-sourdough yeast-risen bread results in only a 38% reduction in phytate.

Corned Beef and Sauerkraut Sandwich on Sourdough Bread

  • Breadico sourdough bread
  • Softened butter
  • Dijon mustard
  • Cheese (traditional Reuben sandwiches use Swiss cheese but we like ours with cheddar)
  • Sauerkraut
  • Niman Ranch Corned Beef (available at Natural Grocers)

Butter the outside of the bread and spread dijon mustard on the inside.  Layer cheese, sauerkraut, corned beef, and then more cheese between the bread.

Cook sandwiches in a skillet until gold brown on both sides.  I like to cover the sandwich with a plate while cooking to trap the heat and ensure the inside of the sandwich is completely melted.
