Salmon Burgers with Spoonings

Adapted from this recipe.

  • 1 lb salmon spoonings
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 T. sour cream or mayonnaise
  • 1/4 cup diced green onion (optional)
  • 1 minced garlic clove
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/8 tsp pepper

Combine all ingredients in a food processor.  Pulse briefly until salmon pieces are pea sized and ingredients are incorporated.

Shape into patties.

Heat 1 T. of oil in a large skillet.

Fry patties on both sides until cooked through.

Serve on a bun like a burger or enjoy them as patties.  I combined 1 T. cilantro pesto (that I had frozen during the summer) with about 1/2 cup sour cream to make a yummy topping.

Yields 6-8 patties.
