Mini Eggplant Pizzas
These mini eggplant pizzas are one of my favorite ways to enjoy eggplant.
This recipe is quite simple to make and I do not have specific ingredient measurements below because you can make as much as your family needs.
For my family of 2 adults and a toddler, I cut up 1 1/2 eggplants to fill 1 baking sheet and used about 1 cup of pizza sauce.
Mini Eggplant Pizzas
- 1-2 eggplants
- Oil
- Pizza sauce
- Your favorite pizza toppings (I used our homemade ground beef sausage)
- Mozzarella cheese
Preheat oven to 425 and line a baking sheet with parchment paper for easy clean up.
Slice eggplant 3/8" thick. Arrange slices on baking sheet and spray or brush each side with a light amount of oil.
Bake at 425 for about 30 minutes, or until fork tender.
Remove from oven and top with your favorite pizza sauce, pizza toppings, and mozzarella cheese.
Return to oven and bake for 10 more minutes, or until the cheese is melted and golden.

This is one of my favorite summer recipes! I made it many times last year and enjoyed it so much. Cannot wait for eggplant this year to make it again and again. :)
