How to Make Soft Serve Blender Ice Cream

As promised, here is my creamy soft serve blender ice cream recipe.  I don't have an ice cream maker at my house, but I do have a Vitamix blender, so I developed a recipe that satisfies my ice cream cravings in a jiffy.  This method can be used with allergy-friendly ingredients like coconut milk and whatever form of sweetener you prefer. 

Note: If you find that your blender gets “stuck” and isn’t able to blend the frozen milk cubes, you can add a splash of milk to get loosen things up and get it blending. Careful that you don’t add too much extra milk though or you will end up with a milk shake!

SOFT SERVE BLENDER ICE CREAM

1/2 T. chia seeds
1/2 cup milk (I use whole raw milk from Happy Grazing Dairy)
2 T peanut butter, almond butter, or other nut butter
2 T honey, maple syrup, or other sweetener
1/2 tsp vanilla extract
20 frozen milk cubes (milk frozen in an ice cube tray)

Optional add-ins
Handful of frozen fruit
1 scoop whey protein powder
1-2 T cocoa powder (you may need to add more sweetener to compensate for the bitterness of cocoa)

Prep: A few hours before making the ice cream, combine the chia seeds and 1/2 cup milk and refrigerate. Freeze the milk in an ice cube tray.

Add all the ingredients to a blender in the order listed. Blend until smooth, using the tamper to stir the ingredients as you blend. If the mixture is too thick or your blender isn’t strong enough, you can add a splash more milk to loosen it up.
