How to Freeze Peppers
Did you know that peppers (sweet peppers or hot peppers) are one of the easiest things you can preserve for winter? Here's how:
1- De-seed and cut them up into whatever size pieces you commonly use.
2- Place in a ziplog freezer bag.
3- Freeze!
They work great for soups, casseroles, omelets, etc. I simply throw the frozen pieces into a pan with oil and saute them along with the onions, garlic, and whatever other veggies the recipe needs.
I know from experience that they will keep at least 1 year in the freezer because I freeze several gallon bags and they last me until the next year when peppers are ready to harvest.
