Crispy Chicken Fritters with Sourdough Starter
This is a great use for extra sourdough starter. I have only tried this recipe with active starter, but I'm pretty sure inactive starter would work as well. My starter is kept at 100% hydration, which means I feed it equal parts flour and water by weight. This creates a starter with a thick gloppy consistency.
Crispy Chicken Fritters with Sourdough Starter
- 1 lb ground chicken
- 1 egg
- 2 T. mayonnaise
- 50 g sourdough starter at 100% hydration (about 1/4 cup)
- 1/2 cup shredded cheese
- 1 minced garlic clove
- 1 T. minced chives, green onions, or parsley
- 3/4 tsp salt
- 1/8 tsp pepper
Mix all ingredients.
Heat 1 T. of your favorite cooking oil in large skillet.
Drop about 1/4 cup of fritter mixture into hot skillet spread about 1/4 thick. Cook until golden brown on both sides and done in the center.
Serve with sour cream and fresh herbs (or ranch!).
Makes about 8 patties.
