Balsamic and Sundried Tomato Lamb Meatloaf

BALSAMIC AND SUNDRIED TOMATO LAMB MEATLOAF

2 eggs
2 T. balsamic vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 cup rolled oats or breadcrumbs
2 T minced garlic
1/2 cup minced onions
1/2 cup sundried tomatoes, diced
1/2 T dried rosemary
1 lb ground lamb

Whisk together eggs, vinegar, salt, and pepper in a large bowl.

Stir in the oats, garlic, onions, sundried tomatoes, and rosemary.

Mix in the ground lamb until incorporated.

Shape into a loaf on a baking sheet.

Bake at 375 for 40 minutes, or until the internal temp is 150 F.
