Baby Bok Choy

Native to China but consumed worldwide, bok choy is a favorite for stir fries. It's also great roasted or grilled. When chopping it up, separate the stem from leaf and throw the stem into the pan a few minutes before adding the leaves. You can also cut the whole head in half and pan fry, roast, or grill it that way, finishing with your desired sauce or seasoning.  

Flavor is similar to cabbage + celery.
