"Tastes Like Summer" Salad
I came up with this recipe because I wanted a salad that would showcase the best of summer flavors.
Tomatoes and cucumbers from Glory Garden are great all by themselves, but the fragrance of basil and the flavor of roasted garlic in the dressing make them even better.
"Tastes Like Summer" Salad
Dressing:
- 2 T. balsamic vinegar
- 2 T. olive or avocado oil
- 1/2 T. raw local honey
- 2 roasted garlic cloves, mashed (See how to roast garlic here.)
- 1/4 tsp salt
Vegetables needed:
- Cherry tomatoes, halved
- Cucumbers, peeled and cut into 1/2" pieces
- Basil, minced
Mix dressing and set aside (an immersion blender works well but a whisk is fine too).
Cut up an adequate amount of tomatoes and cucumbers to feed your family and mix with minced basil.
Drizzle with dressing right before serving. The salad will become very juicy if allowed to sit, so only make what you will eat right away.
This is also great mixed with quinoa, which adds protein and soaks up the flavorful juices and dressing.

This is now my favorite recipe. It’s an awesome alternative to a traditional Greek Salad as the dressing is less vinegary and much more to my taste. This recipe is versatile as I added or substituted my favorite vegetables and my salad turned out terrific.
