Cutting salmon filets into 1 inch pieces and marinating it in a ginger honey sauce allows flavor to infuse every bite. The cilantro pesto adds another layer of fresh flavor.
Salmon is not usually one of my husband's favorite meals, but this is a recipe he actually requested I make again! Even the kids will eat these flavorful bites of salmon.
Ginger Honey Salmon Bites
Serves 3-4
- 18 oz salmon filet or several filets totaling 18 oz (approximately)
- 1 T. honey (use Little Shire's Hot Pepper Honey to kick up the heat!)
- 1 T. Thai red curry paste
- 1/2 T. coconut aminos (or soy sauce)
- 1/2 T. sesame or avocado oil
- 1 minced garlic clove
- 1 tsp fresh grated ginger (see my secret ginger trick here)
- 3/4 tsp salt
Remove the skin and bones from the salmon filets. Cut into 1" x 1" pieces.
In a bowl, combine the rest of the ingredients. Add the salmon bites and stir to coat thoroughly. Marinate for at least 30 minutes, up to 8 hours.
When ready to cook, preheat oven to 450 degrees. Line a baking sheet with parchment paper for easy clean up. Place the salmon bites on the baking sheet and pour any remaining marinade over them.
Bake for 5-10 minutes, or salmon is cooked to your liking. I look for an internal temperature of 135 degrees.
