Four Ingredient Very Berry Soft Serve (Dairy and Sugar Free)
I was craving something fruity, sweet, and cold and this recipe hit the spot! It's an easy to make dessert or afternoon snack that the whole family will enjoy. You can feel good about making them this dairy free and sugar free treat that's full of antioxidant rich berries.
Coconut milk: You will need half of a 14 oz. can for this recipe. What to do with the other half? Make this recipe again tomorrow!
Frozen berries: I used equal parts blueberries, strawberries, and cherries for a total of 1 lb berries. I chose not to use raspberries or blackberries because I didn't want a seedy texture.
Very Berry Soft Serve (Dairy and Sugar Free)
- 1/2 can (which is about 1 cup) full fat coconut milk
- 1/8 tsp salt
- Several drops of pure stevia extract (optional)
- 1 lb frozen berries
Place all ingredients in a blender in the order listed and blend until smooth.
Transfer to a container and freeze for 1-2 hours before serving, or until soft serve consistency. (If frozen completely, it will become too hard to scoop.)
