Baked French Fries with Tallow

Tallow made from the fat of grassfed cows is a great alternative to seed oils. These baked French fries are easy to make in the oven and turn out deliciously crunchy.
Baked French Fries with Tallow
Serves 4
- 1 1/2 lbs russet potatoes
- 3 Tablespoons beef tallow
- 1 tsp salt
Preheat oven to 450 degrees.
Peel and cut potatoes into 1/4" thick fries. Dump them in a pile on a baking sheet lined with parchment paper and put them in the oven to warm for a few minutes (this will ensure the tallow doesn't solidify on them in the next step).
Melt beef tallow. I like to use a small stainless steel measuring cup on the stove since we don't use a microwave (see photo below). Pour the tallow over the warm potatoes and turn the fries to coat evenly. Sprinkle evenly with salt. Spread French fries out on the baking sheet.
Return to the oven and bake for 15 minutes. Flip and bake for 15-20 minutes more, until tender on the inside and golden brown on the outside.
