Easy Roasted Potato and Beef Hash

I had the idea to make a beef and potato hash as I was thinking about easy and simple meals to make this week after our 4th baby joined our family.

I roasted some potatoes in the oven while cooking onions, ground beef, and seasoning in a skillet.  Then I combined the beef and potatoes and topped it all with cheese and fresh basil.  Simple but delicious!

Notes:

Customize this recipe by adding mushrooms, peppers, or tomatoes.  Add them after cooking the beef, and saute briefly until tender.

This is one of many recipes that I use homemade sausage seasoning in.  If you don't have it made up, you can substitute 1/2 tsp salt + 1/2 tsp sage + 1/2 tsp thyme + 1/8 tsp pepper.

Easy Roasted Potato and Beef Hash

  • 2 lbs potatoes, cut into 1/2" cubes
  • 2 T. melted bacon fat or oil
  • 1 onion, sliced
  • 1 lb ground beef
  • 1/2 T. homemade sausage seasoning
  • 1 minced garlic clove
  • cheese
  • fresh basil
  • splash of beef stock, if needed

Toss potatoes in bacon fat or oil.  Sprinkle generously with salt.  Roast at 425 degrees for 30 minutes, or until tender, stirring halfway through cooking.

Meanwhile, heat another tablespoon of bacon fat or oil in a large skillet.  Saute onion until beginning to soften.  Add ground beef and sausage seasoning and cook.  When meat is done cooking, add garlic and saute briefly until fragrant.

Combine the beef mixture with the cooked potatoes.  Add a splash of beef stock if a little extra sauce is desired.  Top with shredded cheese and minced basil.

Leftovers are great for breakfast with eggs!
