With its high protein and gluten content, hard red spring wheat is ideal for yeasted breads, like artisan bread, sandwich bread, pizza dough, and dinner rolls. (For baked goods like muffins, cookies, and pastries, soft wheat is more suitable.) Hard red spring wheat has a reddish colored husk and produces a slightly darker flour than a white wheat.
