2 lb equals 4 1/2 cups dry beans. This will yield 4 1/2 lbs cooked beans, which equals 11 cups.
Place 1 lb (2 1/4 cups) beans in a large bowl. Cover with 1 quart of water. Soak overnight. The next morning, drain the water and place the beans in a large sauce pot with 2 quarts of water. Bring to a simmer and cook for 2-3 hours, until the beans are tender and just beginning to split apart. You can test them by smashing them with a fork. When done, drain and rinse. I like to freeze mine in a gallon bag to have on hand for recipes.
