Unlike commercial pigs that give birth in farrowing crates that are so small the mama pig can't even turn around, Joel allows his sows the freedom to move and raise their piglets without being confined at all.
About Fresh Side Pork:
Due to regulatory red tape, we were not able to get bacon this time. Fresh side pork is the same cut of meat as bacon, but has not been cured or seasoned and will need to be cooked differently. It is a blank slate to which you can add your own seasoning.
Another option is to season it generously with salt, sugar, and spices and fry it in a skillet.
(It does not get crispy if baked unseasoned and laid flat on a sheet pan as you would cured bacon.)
